German Pancakes have always been a favorite in our family.
The kids would always ask me to make them.
It didn’t matter if it was for breakfast, lunch, dinner, or a midnight snack.
When I saw this on pinterest.com, from Real Mom Kitchen, I just KNEW I had to try it!
I used my German Pancake Recipe and adapted it for the mini’s.
Mini German Pancakes
Here is what you need:
Butter
1 cup Milk
1 cup Flour
6 Eggs
1/2 teas. Salt, any kind
Preheat oven to 350 degrees.
Cut thin slices of butter and place in your muffin tin. (about 1-2 teaspoons worth)
Place in oven to melt butter.

Next, mix milk, flour, eggs and salt with a wire whisk.
Place about 1/4 cup of flour/egg mixture into each muffin section.
Bake for 15 minutes.
The pancakes will be puffed up when you take them out of the oven
and then they will sink back down.

Serve with your favorite pancake toppings.
We topped ours with fruit, homemade syrup, cool-whip and sprinkled with powdered sugar. YUM!
This was a nice change from the normal German Pancakes we make.
The Husband likes them a little crunchier, so for him,
I baked them at 425 degrees for 10 minutes and they were perfect for his taste.
To make this recipe in a 9×13 pan.
Follow all instructions as above except Bake at 450 degrees for 15 to 20 minutes.

Hi Lynaea! We get at least four eggs a day from out girls. This is a great way to use them. When my kids come home for a visit, they always want german pancakes!
