Can you believe that July 4th is right around the corner!? You can’t have a holiday without some sort of cheesecake. It is against the law, or something!! Cheesecake is such a great summer treat and these red, white and blue cheesecake bars are perfect for the upcoming holiday. Creamy cheesecake is poured over top of a delicious graham cracker crust. A swirl of fresh fruit on top creates the red and blue colors mixed with creamy cheesecake. Top with sliced strawberries for an extra touch of sweetness and red coloring! Red, White, and Blue Cheesecake Bars

Ingredients:
2 1/2 cup graham cracker crumbs
9 Tbsp butter, melted
1/2 cup raspberries
1/2 cup blueberries
16 oz cream cheese, softened
1 cup + 1 Tbsp sugar
3 eggs
1/2 cup Greek yogurt
Strawberries

Directions:

Preheat oven to 350 degrees.

Line a 9×9 square dish with parchment paper.

Place raspberries in a small bowl and sprinkle with 1/2 Tbsp sugar.

Pour blueberries in a second bowl and sprinkle 1/2 Tbsp sugar on top.

Let sit while preparing other ingredients.

In a separate bowl, combine graham cracker crumbs and melted butter. Stir well to ensure all the crumbs are coated. Press mixture into the bottom of the prepared pan. Bake for 15 minutes. Set aside to cool.

Beat cream cheese and remaining sugar until smooth. Add eggs, one at the time, and mix well. Add yogurt and mix well. Pour over prepared crust.

Blend raspberries until smooth. Drop dollops of raspberry mixture on cream cheese mixture. using a knife, swirl the raspberries Repeat with blueberries.

Bake at 350 degrees for 45 to 55 minutes or until set. Let cool. Refrigerate until ready to eat.
