I always love the flavors of chocolate and peppermint together. Don’t you? This recipe fits the bill. This was the first time I have made anything using the little peppermint bites. It was a lot easier to use them than to break up a bunch of peppermint sticks, and they tasted good too!

Chocolate Bundt Cake with Peppermint Glaze

Ingredients:

FOR THE CAKE

1 cup unsalted butter, softened to room temperature
1 and ½ cups sugar
1 and ½ tsp vanilla extract
4 large eggs
½ cup whole milk
½  cup cocoa powder, unsweetened
2 cups all-purpose flour
1 tsp baking powder

FOR THE PEPPERMINT GLAZE

2 cups powdered sugar, sifted
4 tbsp unsalted butter, melted
4 tbsp half and half
1 cap full of peppermint extract
Peppermint bites, for garnish (optional)

Directions

1. Preheat oven to 350 degrees.
2. Butter/Grease 10 cup bundt cake pan and set aside.
3. Using a mixer, cream together the butter and sugar.
4. Add in the vanilla extract.
5. Add in the eggs one at a time.
6. Add in the whole milk and then the cocoa powder.
7. Slowly add in the flour ½ cup at a time.
8. Using a plastic spatula or spoon, fold in the baking powder.
9. Transfer the cake mix into the bundt pan and bake for 45 minutes.
10. After 45 minutes, insert a toothpick into the bundt cake. If the toothpick comes out clean, we are all set.

11. While the bundt cake is cooling, prepare the glaze by melting the butter in a small saucepan on low. 
12. Add the sifted powdered sugar into the mixing bowl and then add in the melted butter. Wisk for 1-2 minutes until thoroughly mixed. 
13. Add in the half and half 1 tbsp at a time.
14. Add in the peppermint extract.
15. Generously drizzle the glaze over the cooled cake.
