Cranberry Orange Bars

Winter flavors abound in recipes and this light and delicious treat is a perfect blend of some of our favorites. These Cranberry Orange Bars are a great sweet treat that bring the flavors you love without the syrupy sweetness of other desserts that are common this time of year. Somewhere between a cake and a brownie texture these are light enough in flavor and texture that they satisfy the sweet craving you have without making you feel like you have overindulged.

 

CRANBERRY ORANGE SNACK BARS

3 Cups All Purpose Flour
1 Cup Granulated Sugar
2 Large Eggs
1 Cup Whipping Cream
1 Teaspoon Salt
2 Teaspoons Baking Powder
½ Cup Orange Juice
Zest of 1 Orange
½ Cup Chopped Dried Cranberries 

1. Preheat oven to 375 degrees
2. Spray a 9×13 baking dish with non-stick cooking spray
3. In a large bowl stir together flour, sugar, salt, and baking powder.
4. Mix in eggs, cream and orange juice until well blended. Add in orange zest and cranberries
5. Pour into pre-sprayed baking dish
6. Bake at 375 degrees for 35 minutes or until golden brown and toothpick inserted in center comes out clean.

I adore this light and tasty cake with a nice cup of tea or apple cider. It is also great made into muffins for easy on the go snacks or breakfasts. With the great flavor combination in these snack bars you will find everyone asking you to make and bring them to the office or next holiday party. They are great served on their own or with a light orange juice and powdered sugar glaze.
