Gifts in a Jar: Friendship Soup Mix

I have been making this soup mix for my father-in-law for years. One year, I thought about not making it, and I got in so much trouble from my mother-in-law! She said that Dad loves getting this from me, and that he always adds different stuff to it when it is cooking. Needless to say, ten years later, I am still making this Friendship Soup Mix in a jar for him! I have no idea where the recipe originally came from. A couple of Christmas’ ago, I made everyone a Family Cookbook, that I had printed, and I got rid of all of my scrap papers with my recipes on them. I figured I didn’t need them anymore since my recipes were all in that cookbook. That was before I started blogging and cared about where each one came from!   

Gifts in a Jar: Friendship Soup Mix 
Here is what you will need:
1/2 cup dry Split Peas
1/3 cup Beef Bouillon Granules
1/4 cup Pearl Barley
1/2 cup dry Lentils
1/4 cup dried Onion Flakes
2 teaspoons dried Italian Seasoning
1/4 cup uncooked Long Grain White Rice
2 Bay Leaves
1/2 cup uncooked small Shell Pasta  

In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, italian seasoning, rice, and bay leaves. Wrap the pasta in a plastic bag and place in the jar. Seal tightly.  

Attach a label to the jar with the following instructions:

Additional Ingredients:
1 pound ground beef Black Pepper, to taste
Garlic Powder, to taste
1 (14.5 ounce) can Diced Tomatoes, undrained
2 (8 ounce) cans Tomato Sauce
3 quarts of Water

To prepare soup: Remove pasta from the jar and set aside. In a large pot, over medium heat, brown ground beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato sauce, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Remove bay leaves. Stir in pasta, cover, and simmer for 15 to 20 minutes, or until pasta, peas, lentils, and barley are tender.

I decided to change things up a bit this year. I left out the onion flakes and the beef bouillon, and I will change the additional ingredients to include chopped onion (instead of the onion flakes) and beef broth (instead of the beef bouillon). The main reason I did this, is because I don’t keep either of those things on hand, and I didn’t feel like going to the store. Plus, I prefer homemade beef broth or better than bouillon beef flavoring better than the beef granules.
