Roasted Pumpkin Seeds

The past few weeks we have been focusing on pumpkins for Kitchen Basics 101So far we’ve learned how to make our own pumpkin pie spice mix, and last week we learned how to make our own pumpkin puree.  Today, we will learn how to roast pumpkin seeds.   

Roasted pumpkin seeds are a GREAT way to have something fun to eat without all the sugar from the traditional Halloween treats available at this time of year.  Pumpkin seeds are high in fiber, protein and vitamins and they’re easy to roast.  You can eat them plain, season with salt or other seasonings.  
 
 
Roasted Pumpkin Seeds

Ingredients:
 
1 to 2 cups whole pumpkin seeds
Vegetable Oil; about 2 TBS. or Melted Butter
Salt, or other seasonings;  chili powder, curry powder or seasoned popcorn salt.  
 
Directions: 
 
Cut open the pumpkin and scoop all the “innards” out.  
Make sure you rinse and dry the seeds well.  
The key to having crispy roasted pumpkin seeds is to make sure the seeds are dry to begin with.

Spread the seeds out on a baking tray, coat with the oil or butter 
and sprinkle with the salt or other seasonings…
 
 
Roast at 400 degrees stirring once or twice until crispy.
 
 
 This is a delicious and fun treat for your family!
