Loaded Baked Potato Soup in the Crock Pot

I am so excited to get to participate in this year’s SoupaPalooza at TidyMom and Dine and Dish!!
It didn’t take much thinking to know exactly what recipe I wanted to share.
Loaded Baked Potato Soup in the Crock Pot was the first that popped in my head.
It is really yummy, if I do say so myself.
I originally found this recipe at Crocking Girls.
 I made several changes to the original recipe to suit our taste buds.

Loaded Baked Potato Soup in the Crock Pot
Here is what you need:
8 to 12 Red Potatoes, diced
8 slices of Bacon, fried and diced.
1/2 to 3/4 of a Large onion, chopped
1 quart hot Water and 2 huge Tablespoons Better than Bouillon, chicken flavor
3 heaping Tablespoons of minced Garlic
1/4 cup Butter
Salt and Pepper
1 cup Whole or 2% Milk
1 cup Medium or Sharp Cheddar Cheese, shredded
Combine potatoes, bacon, onion, water, bouillon, garlic, butter, salt and pepper in the crock pot.
Cook on high for about 4 hours or low for 8 hours.
 (or until potatoes are tender.)
When potatoes are tender, use the back of a big spoon to mash some of them up.
This will help thicken the soup.
Next, add the milk and cheese. Cook until heated and cheese is melted.
