Some of you may know that I’ve recently decided to make healthier choices when it comes to eating. Sure you could call it a diet because initially that’s what it looks like, feels like, and sadly tastes like. My diet has resulted in a few lost pounds and feeling like I had more energy each day. Slowly, I’ve noticed another transformation. Instead of running after work to grab fast food after a bad day, I drive straight home and grab veggies and cottage cheese. Not happy about it on the tough days, but I stick to my new eating habits. I want it to become a lifestyle not just something I’m doing right now. That means buying different foods and really read what’s in everything I’m getting at the grocery store. Whew! It’s been a tough undertaking for sure.

I Can’t Believe It’s Not Butter!® wanted me to try out their new spread and share one of my favorite recipes using their product. I was surprised at how versatile their product was because I could use it for breakfast, lunch, dinner, and even some of my favorite snacks.

Here’s my new favorite healthy snack recipe:

Parmesan and Garlic Roasted Cauliflower

Ingredients
1/2 to 1 Tablespoon I Can’t Believe It’s Not Butter
Garlic Salt
Parmesan Cheese

Directions
Generously sprinkle with garlic salt and then parmesan cheese. Bake at 400 degrees Farenheidt for about 30 to 40 mins, or until a nice light brown.

Let cool and enjoy!
