This is the last recipe for our week of strawberry recipes. I hope you have enjoyed all of the other ones that I have shared with you. Today’s recipe is for a delicious and healthy granola bar. Everyone has their own definition of what a healthy recipe means to them. For me, the ingredients in this recipe are way better for you than the granola bars you buy at the grocery store. For one, you can actually pronounce all of the ingredients, and two, you don’t have to get a dictionary out to find out what the ingredient is! See, this recipe is a win win!
Other than the dried strawberries, you may have all of the other ingredients at home to make this Strawberry Banana Granola Bars with White Chocolate Drizzle on the top. The only downside to this recipe that I can think of, is that you need to keep it refrigerated. I think a lunch box with one of those little cooler things in it would be fine.
Strawberry Banana Granola Bars with White Chocolate Drizzle
1 teaspoon coconut oil, melted
½ cup mashed banana
½ cup milk
1 tablespoon honey
2 ½ cups quick cooking oats
1 cup dried strawberries, chopped
Chocolate Drizzle Ingredients:
1 cup white chocoalte chips
¼ teaspoon coconut oil
Preheat the oven to 300-degrees. Lightly spray a 9×9 square baking pan with cooking spray.
Mix together the coconut oil, banana, milk and honey in a large bowl. Add the oats and mix gently. Fold in the dried strawberries.
Press the mixture into the pan and bake for 15-19 minutes. Cool completely before removing from the pan and slicing.
In a small bowl, microwave the coconut oil and white chocolate chips in 30 second intervals until smooth and creamy. Drizzle the chocolate over the bars. Let the chocolate set up – about 1 hour – before handling.
Store in an airtight container or snack bags in the refrigerator – best when chilled.
