Strawberry Black Forest Parfait

For this parfait, I decided to take the classic flavors of black forest cake and transform it into a parfait. Of course, I wanted to stay with this week’s strawberry theme, so I substituted strawberries for the cherries. The delicious tartness of the strawberries combined with the creaminess of the whipped cream and crunch of the chocolate cookies makes a dessert you will want to have all summer long.

Strawberry Black Forest Parfait

2 cups frozen Strawberries
30 Chocolate Wafer Cookies, smashed into crumbs
2 Tablespoons Sugar
1 Tablespoon Cornstarch
8 oz Cream Cheese
2/3 cup Sour Cream
2 cups Whipped Cream or Cool Whip
1/3 cup Sugar
2 teaspoons Lemon Juice
1/4 cup mini Chocolate Chips

Thaw strawberries. Drain, reserving liquid. Add water to strawberry liquid so that you have 1/3 cup of liquid.

Add sugar, cornstarch and juice mixture to a small saucepan. Bring to a boil over medium heat. Cook, stirring constantly until thickened; about 2-3 minutes. Remove from heat and add strawberries.

Put cream cheese, sour cream and 1/3 cup sugar in food processor. Pulse until smooth. Add lemon juice while machine is running. Turn machine off and gently fold in whipped cream.

Place 2 Tablespoons of wafer crumbs into bottom of a glass. Top with 1/3 cup of cream cheese mixture. Add 1 Tablespoon of mini chocolate chips and 1 1/2 Tablespoons of strawberry mixture. Repeat layers. Refrigerate for at least 3 hours.
