Strawberry Blueberry Chia Seed Jam

Do you buy jam and jelly at your local grocery store? If you have never tried making it yourself at home, this simple Strawberry Blueberry Chia Seed Jam recipe would be a great one to start with. It is so simple that the kids could even help you make this. When my kids were still at home I would buy pounds of different fruits to make and can jam for the following year. Jams make a great gift for the holidays or to tell someone thank you. This recipe however, is just enough for one family. There is no long, time consuming, process. It is quick and easy! 

 Strawberry Blueberry Jam

Strawberry/Blueberry Chia Seed Jam

Ingredients:
2 cups Fresh Organic Strawberries, hulled and quartered
1 cup Fresh Organic Blueberries
1/4 cup Pure Maple Syrup
1/4 cup Chia Seeds

Directions: 
Over medium heat, add strawberries, blueberries  and maple syrup in a small sauce pan and cook until berries get soft and release their juices, about 10-15 minutes. Stir often and smash stubborn berries, a wire whisk works well.   Stir in chia seeds and continue cooking, stirring often, until thickened.  About 10-15 more minutes.  Remove from heat and let cool. It will thicken as it cools. Pour into a glass jar and keep refrigerated for up to 10 days.

    ARe the CHia seed still crunchy at that point. I had my first try with Jam last month and it didn’t come out too well. I can see this going over my oatmeal plus the seeds have extra fiber. I’m going to try this.
