Strawberry Goat Cheese Tartlets

Strawberry Goat Cheese Tartlets

Sometimes you want to bring the “it” dish to the dinner party over the holidays. Sure you could make a ton of cute Christmas cookies or be a slave to your oven for hours of cooking. I want to make a dish that’s easy to make and easy to eat. Break away from the frostings, traditional cheesecakes, and chocolate everything to surprise your guests with something a little more elegant and savory – Strawberry Goat Cheese Tartlets!

I love making these Strawberry Goat Cheese tartlets because they are super simple, delicious, and always a crowd pleaser. They cook up in 10 minutes, and throwing them together takes 15 minutes which is super fast in my book. They make the most mouth watering party appetizer, and they are creamy and delicious. You could also try making these with other berries aside from strawberries – I think blueberry or cherry would be equally delicious. Yum!

Makes 30 Tartlets

2 packages mini phyllo tartlets (15 per pack)
4 ounces goat cheese
9 strawberries, divided (7 for recipe and 2 for garnish)
1 tsp dried basil
1⁄4 tsp pepper
1⁄4 tsp salt
3 TBS honey

1. Preheat oven to 350 degrees F. In a food processor, add goat cheese, 7 strawberries, salt, pepper, and basil. Process for 1 minute or until fully combined (scrape down the

sides a few times). Set aside.

2. On a large baking sheet, arrange tartlet shells 1 inch apart. Using a small spoon, fill each tartlet with cheese mixture (careful not to overflow the tartlet). Place into oven and

bake 10 minutes.

3. While the tartlets are baking, cut remaining 2 strawberries for garnish.

4. Remove baked tartlets from oven, top with strawberry garnish and serve immediately.

Can these be made ahead if you leave off the fresh strawberry? If so then how should they be stored?
